Oh, they are called nian zhu (??, prayer beads), they work just like a rosary in Catholicism. Everytime they chanted a prayer, they thumb one bead over. It's usually a short braelet . The longer ones (the one you see in movies) are called fo zhu (??, Buddha beads), they are made out of wood and usually only wornmonks. It's comprised of 108 beads. The really large ones are very rare now and it's usually nly sold for tourism in China. You could always make one by yourself. =/ You can get some nice wire, beads, metal crosses at material stores. The beads can be bought at arts and craft stores, and the corsses can be bough where the beads are bought. ^^ Making them would be more fun than actually buying one.
